Quotes for the last day of 2008
New Year's Easy Recipes
Ingredients:
- 2 cups uncooked elbow macaroni (an 8-ounce box isn't quite 2 cups)
- 4 tablespoons (1/2 stick) butter, cut into pieces
- 2 1/2 cups (about 10 ounces) grated sharp Cheddar cheese
- 3 eggs, beaten
- 1/2 cup sour cream
- 1 (10 3/4-ounce) can condensed Cheddar cheese soup
- 1/2 teaspoon salt
- 1 cup whole milk
- 1/2 teaspoon dry mustard
- 1/2 teaspoon black pepper
Directions:
- Boil the macaroni in a 2 quart saucepan in plenty of water until tender, about 7 minutes. Drain.
- In a medium saucepan, mix butter and cheese. Stir until the cheese melts.
- In a slow cooker, combine cheese/butter mixture and add the eggs, sour cream, soup, salt, milk, mustard and pepper and stir well. Then add drained macaroni and stir again.
- Set the slow cooker on low setting and cook for 3 hours, stirring occasionally.
- 2 cups flour2 cups sugar
- 1/2 cup unsweetened cocoa powder
- 1-1/2 teaspoons baking soda
- 1-1/2 cups milk
- 1/2 cup butter
- 2 teaspoons vanilla
- 2 eggs
Directions:
- Preheat oven to 350 degrees.
- Measure out everything but the eggs directly into your mixer bowl
- Mix on low speed just until incorporated.
- Beat on high speed for 2 minutes.
- Add eggs, beat on high speed again for 2 minutes.
- Measure out into cupcake pan lined with cupcake papers. A 2 ice cream scoop works great for this.
- Bake for about 15-20 minutes until a toothpick comes out clean. Let cool slightly in the pan then transfer to a rack to cool completely before frosting.
Chocolate Buttercreamenough to lightly frost 24 cupcakes
- 1 stick butter
- 1/2 cup cocoa
- 4 cups confectioner’s sugar
- 1/4 cup milk
Directions:
- Beat butter on high for about 30 seconds until soft.
- Add cocoa and 1 cup of sugar and beat until incorporated
- Add half of the milk and the remainder of sugar and beat until incorporated.
- Continue to add milk until you get to the consistency you want.
AssembleThere are many ways to go here, in this case, I simply piped the frosting onto the cupcakes with a large star tip.

Holiday Recipe
Martha Stewart's baked french toast with raspberry sauce...
You can prepare it the night before and bake it in the morning so at the time everyone in the house wake up from their sleep...They can smell the toast and have a wonderful breakfast made by YOU.
Ingredients: (serves 4)
- 4 large eggs
- 1 1/2 cups whole milk
- 1/2 cup sugar
- 1 teaspoon pure vanilla extract
- 1/8 teaspoon salt
- 4 thick slices challah, brioche, or other egg bread (1 inch thick)
- 2 tablespoons unsalted butter, melted
- 1 bag (10 to 12 ounces) frozen raspberries (or strawberries), thawed
- Smoked chicken sausage, warmed, for serving (optional)
Directions:
- In a 9-by-13-inch baking dish, whisk together eggs, milk, 1/4 cup sugar, vanilla, and salt.
- Arrange bread in dish in a single layer; let soak 15 minutes. Turn bread over; cover, and refrigerate until most of the liquid is absorbed, at least 30 minutes and up to overnight.
- Preheat oven to 350 degrees. Brush a rimmed baking sheet with butter. With a spatula, carefully transfer soaked bread to sheet. Bake until French toast is set in center and lightly browned on the bottom, 25 to 30 minutes.
- Meanwhile, in a medium bowl, combine raspberries and remaining 1/4 cup sugar, mashing lightly with a fork.
- Remove French toast from baking sheet with a thin metal spatula; serve with raspberry sauce and, if desired, sausage.

Choco Fondue
Speaking about hot choco..I came across this fabulous Chocolate Fondue from Petrossian. It is a stoneware pots that can warm you fondue quickly and easily in the microwave or bain-marie. The pot can hold heat up to 45 minutes. You can serve this to your family or guests in this holiday season. Trust me they will be so thrilled to dip fresh fruits, marshmallow or biscuits in this choco fondue..

Ice Cream Cone Cupcakes
Can't get enough of cupcakes? Here's another cute cupcake recipe from Cupcakeblog...
Cupcakes (makes 24 cupcake ice cream cones/350 degree oven)
Ingredients:
- 2 cups flour
- 2 cups sugar
- 1/2 cup unsweetened cocoa powder
- 1-1/2 teaspoons baking soda
- 1-1/2 cups milk
- 1/2 cup butter
- 2 teaspoons vanilla
- 2 eggs
Directions:
- measure out everything but the eggs directly into your mixer bowl
- mix on low speed just until incorporated
- beat on high speed for 2 minutes
- add eggs, beat on high speed again for 2 minutes
- transfer batter into a container with a pour spout (like a pyrex measuring cup)
- pour batter into ice cream cones, leave a good half inch between the batter and the top of the cone
- bake at 350 for about 20 minutes or until cake tester comes out clean
Vanilla and Chocolate Buttercream Frosting
Ingredients:
- 2 sticks butter
- 7 cups powdered sugar, sifted
- 1/4 cup milk1 teaspoon vanilla
- 1/4 cup cocoa powder
Directions:
- beat butter until creamy, scrape bowl
- add 5 cups of sifted powdered sugar, milk, and vanilla, beat until combined
- add more powdered sugar until you get to the consistency you want (not too stiff so that its hard to pipe)
- take out half of the buttercream and reserve, this is your vanilla5. add the cocoa powder to the remaining half and beat to combine, you might need to add a little milk if its too stiff, this is your chocolate buttercream
Assembly:
- pipe frosting onto cooled cupcakes with a large star tip
- top with sprinkles
