Baby Spinach, Tomato and Basil Pasta
Ingredients:
- 300g angel hair pasta
- 3 cloves garlic, minced
- 1/2 cup basil, chopped
- 3-4 cups baby spinach
- 4 cups tomato, diced
- 1 red chilli, de-seeded and minced (optional)
- Olive oil
- Salt and pepper
- Lemon wedges to serve
Directions:
- Cook angel hair pasta according to package instructions.
- Toss garlic, basil, baby spinach, tomato and chilli in a large bowl.
- Add a little drizzle of olive oil.
- Take pasta off heat and drain once ready.
- Add to the bowl with the fresh yum yums.
- Drizzle olive oil in to coat. Toss carefully to combine.
- Serve with salt and pepper and squeeze on the lemon wedges.
- Don't forget that angel hair cooks very quickly.
- You can substitute red chilli for dried red chilli flakes if needed.
